For the burger, combine mince, spring onions, mustard, worcestershire sauce, rosemary and seasonings. Mixing well. Form into 4 patties and refrigerate until required.
For the mayonnaise, combine all ingredients, mixing well and adjust seasoning to taste. Refrigerate until required.
Pre-heat a barbecue flat and grill plate. Drizzle flat plate with a little oil and cook patties for 4-5 minutes each side until cooked to your liking. Whilst cooking crack eggs onto plate and cook for 4-5 minutes. Place cut side of buns on to grill plate for several minutes until golden. Set aside.
To assemble burgers. Spread a good dollop of mayonnaise onto the base of each bun, top with rocket, burger, cheese, capsicum that has been tossed in red wine vinegar and eggs. Serve immediately.
Tip: for added indulgence, add some grilled smoked bacon or chorizo.
